Easy Chicken Sausage and Broccoli Pasta

    Turn that packet of chicken sausages into something special with this easy pasta recipe. Pine nuts and sun dried tomatoes give it an Italian feel.

    Serves: 4 

    • 300g linguine
    • 1/4 olive oil
    • 3 garlic cloves, sliced
    • 500g broccoli, cut into florets
    • 400g spicy chicken sausages, sliced
    • salt, to taste
    • 1/2 cup sun dried tomatoes, diced
    • 1/4 cup pine nuts
    • 1/2 cup grated Parmesan

    1. Cook the linguine in boiling water until al dente.
    2. Meanwhile, heat oil in a frypan, add garlic and cook 2 minutes. Add broccoli and sausages and fry 15 minutes. Sprinkle with salt to taste.
    3. In a bowl, combine linguine, chicken sausages, sun dried tomatoes and pine nuts. Serve sprinkled with cheese.
