Easy Chicken Pasta with Mushrooms

    This chicken pasta dish is inspired by the French classic called chicken marengo, but omits the crayfish! You can also serve it over rice.

    Serves: 4 

    • 1/4 cup olive oil
    • 4 chicken breast halves, cut in half
    • 1/4 cup flour
    • 1 red onion, finely chopped
    • 2 cloves garlic, crushed
    • 250g mushrooms, quartered
    • 1/2 cup white wine
    • 3/4 cup tomatoes, diced
    • 2 tablespoons tomato paste
    • salt, to taste
    • 450g spiral pasta

    1. Heat 2 tablespoons of the oil in a frying pan. Coat the chicken with the flour and fry 5 minutes a side, or until browned. Remove and set aside.
    2. Add remaining oil to the frying pan and cook the onion and garlic, stirring, about 5 minutes or until onion is soft. Add mushrooms and cook five more minutes.
    3. Add the wine, tomatoes, tomato paste and salt and bring to a boil. Return the chicken to the frying pan. Reduce heat, cover and simmer 20 minutes.
    4. Meanwhile, boil the pasta until al dente. Serve the chicken over the pasta.
