Smoked Chicken Soup

    This is a kind of rustic chicken soup which includes a little smoked chicken meat. Serve with crusty bread for the full effect!

    Serves: 6 

    • 1 tablespoon olive oil
    • 1 large onion, finely diced
    • 3 cloves garlic, crushed
    • 2 carrots, thinly sliced
    • 250g mushrooms, sliced
    • 1/4 cup pearl barley
    • 1/2 cup tomatoes, diced
    • 375g skinless boneless chicken thighs
    • salt and pepper, to taste
    • 5 cups water
    • 90g smoked chicken, diced

    1. Heat oil in a saucepan then add onions and garlic and cook until soft, about 10 minutes. Add carrots and cook two more minutes. Add mushrooms and cook 2 more minutes. Stir in the barley.
    2. Add tomatoes, thighs, salt and pepper and water. Bring to a simmer for 40 minutes, covered. The barley should be cooked through and tender.
    3. Remove chicken and let cook. Shred and return to the soup with the smoked chicken. Heat through.
