Spiced Chunky Vegetable Soup

A delicious, wholesome soup. Perfect for winter colds and chills. Chicken or noodles can be added if desired. This is so wonderful and loved by everyone who tries it.

Serves: 4 

  • 3 large potatoes, peeled and cut into chunky dice
  • 2-3 large carrots, peeled and sliced
  • 1 large brown onion, peeled and cut in chunky dice
  • 2 stalks celery, sliced
  • 1 cup shredded cabbage
  • 1/2 cup shredded baby spinach
  • 1/2 cup green beans
  • 2 teaspoons minced ginger
  • 2 teaspoons minced garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons sambal oelek
  • 2 tablespoons laksa or Thai red curry paste
  • 2 cups chicken stock
  • 2 cups vegetable stock
  • salt and pepper, to taste
  • 2 bay leaves
  • 1 bouquet garni sachet

Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

  1. Over a medium heat, cook all veg (except cabbage, spinach and beans) in 2 tablespoons olive oil until onion is translucent, roughly 5 mins.
  2. Add ginger, garlic, tomato paste, sambal and curry paste. Mix well and allow to cook until fragrant.
  3. Add stock, salt and pepper to taste, bay leaves and bouquet garni sachet. Bring to boil, reduce to a simmer and cover. Cook for 15 mins or until potato and carrot are just tender.
  4. Remove bay leaves and bouquet garni. Add remaining veg, cover and simmer for a further 5-10 mins or until beans are cooked through.
  5. Garnish with fresh parsley and coriander if desired and serve with cheesy garlic croutons. Delish!
