Curried Thai Chicken Soup

    A quick and simple Thai chicken soup that does not require any exotic ingredients like galangal. So good and so warming!

    Serves: 4 

    • 1 tablespoon olive oil
    • 3 spring onions, sliced
    • 1 clove garlic, crushed
    • 2 teaspoons curry powder
    • 1 teaspoon ground ginger
    • 2 tablespoons plain flour
    • 1 1/2 cups chicken stock
    • 1 1/2 cups water
    • 1 cup coconut milk
    • salt, to taste
    • 1 cup leftover chicken, diced
    • coriander leaves, to garnish

    1. Heat oil in a saucepan and add spring onions and garlic. Cook just a minute until spring onions have wilted. Stir in curry powder and ginger and cook 1 minute. Stir in flour.
    2. Add stock and water and bring to a simmer, stirring constantly. Add coconut milk and salt if needed. Add chicken and simmer until chicken is heated through. Serve, garnished with coriander.
