After much trial and much error


  • 360 mls warm water
  • 1 tsp salt and sugar
  • 2 tbs olive oil
  • i tbs margarine
  • 570 gms high grade flour
  • 3 tsp surebake yeast
  • 1 tbs dried Rosemary
  • olive oil for brushing


  1. Add above ingredients to a breadmaker in the order listed above
  2. Set breadmaker to dough setting and begin cycle
  3. When cycle ends empty, empty dough onto floured surface and with floured fingers work the dough to remove the air for a few minutes.
  4. Add to a lightly oiled bowl and stand for i hour
  5. Work the dough againfor a few minutes.
  6. I make each loaf in a 6 small pie dishes which should be lightly oiled
  7. Weigh the dough and divide the dough into 6 pieces. Each should weigh about 160 grams
  8. Press dough firmly and evenly into each dish. brush generously with olive and sprinkle evenly with sea salt. Stand for one hour
  9. Set oven at 200 fan
  10. Place dishes on the oven racks in the middle of the oven and check after 20 mins. May need a little more time if not golden
  11. I freeze the loaves and thaw in the microwave. With the oven set on grill I place loaf in the centre of the oven and cook 4 mins each side. As ovens may vary you may have to watch this step closely depending how crisp you like your crust


Although it takes more time, the making of small loaves gives a lot more crust. Slice loaf cross wise after resting for a few minutes and smear with a little margarine Dough can of course be made by hand very quickly but breadmaker dough is so good
