Chicken Pizza with Olives and Artichokes

    A lovely chicken pizza recipe, full of flavour from jarred artichoke hearts and pitted kalamata olives. I like to sprinkle over some chilli flakes before eating.

    Ingredients
    Makes: 1 pizza

    • 1 tablespoon olive oil
    • 2 cloves garlic, crushed
    • 500g boneless skinless chicken breasts, diced
    • dough for one pizza
    • 1 cup pizza or pasta sauce
    • 1 1/2 cup mozzarella, grated
    • 1 cup kalamata olives, pitted and diced
    • 300g artichoke hearts, drained

    1. Preheat the oven to 230 degrees C.
    2. In a frypan, heat olive oil. Add the garlic and cook 1 minute. Add chicken and cook 5 minutes until chicken is almost cooked through.
    3. Roll out the pizza dough and place on a pizza tray. Spread the sauce over, then sprinkle with mozzarella, olives, artichoke hearts and chicken.
    4. Bake until pizza is done and cheese is bubbling, about 25 minutes.
