    Poached chicken lettuce rolls like these are found in many Asian countries. Sometimes they are served with a simple dipping sauce of soy sauce and vinegar.

    Serves: 8 

    • 1 cup chicken stock
    • 2 slices ginger
    • 350g boneless, skinless chicken breast
    • 1/4 cup rice vinegar
    • 1 tablespoon soy sauce
    • 1 carrot, julienned
    • 1 capsicum, julienned
    • 16 butter lettuce leaves

    1. In a saucepan, combine stock and ginger and bring to the boil. Add chicken, reduce to a simmer and cook 12 minutes. Remove chicken and discard stock. Shred chicken as soon as it is cool enough to handle.
    2. In a bowl, combine rice vinegar and soy sauce. Add chicken, carrot and capsicum and toss to combine.
    3. Spoon chicken mixture onto lettuce leaves then roll up.
