    This apricot chicken recipe is perfect for a dinner party because it comes together so quickly. You can even poach the apricots in advance and keep in the fridge.

    Serves: 4 

    • 1 cup dried apricots
    • 1 cup red wine
    • 2 strips orange zest
    • 3 tablespoons sugar
    • 2 tablespoons butter
    • 8 skinless chicken thighs
    • 2 tablespoons flour
    • 1/2 cup chicken stock
    • salt and pepper, to taste

    1. In a saucepan combine apricots, red wine, zest and sugar and bring to a boil. Reduce heat, cover and simmer 20 minutes. Set aside.
    2. Melt butter in a nonstick frypan. Coat the chicken with the flour and brown on both sides, about 8 minutes. Remove chicken and set aside.
    3. To the frypan, add stock, apricot mixture and salt and pepper to taste. Bring to a boil.
    4. Return chicken to frypan, reduce heat and simmer 15 minutes or until chicken is cooked through. Discard zest before serving.
