Roast Apricot Chicken

A simple glaze of apricot jam and lemon makes all the difference to a roast chicken. Use your favourite stuffing mix or make your own if you like.

Serves: 6 

  • 1 whole chicken, about 2 1/2 kg
  • 1 teaspoon salt
  • 1/2 cup apricot jam
  • 1 tablespoon lemon juice
  • 200g stuffing mix

  1. Preheat the oven to 200 degrees C.
  2. Rub the chicken inside and out with salt. Prepare the stuffing mix according to the package directions and spoon into the body of the chicken. Truss the chicken legs together with kitchen string.
  3. Place the chicken on a rack in a roasting tin, breast side up and with the wings tucked underneath. Roast 1 hour.
  4. In a small bowl, mix apricot jam and lemon juice. Brush half the mixture over the chicken and roast another 10 minutes. Brush remaining mixture over the chicken and roast another 20 minutes or until cooked through.
