Chicken Risotto in the Slow Cooker

    The easiest chicken risotto there is, just combine all the ingredients in a low cooker and forget about it! The bacon keeps it rich and juicy.

    Serves: 4 

    • 4 boneless, skinless chicken breasts
    • 2 rashers bacon, cut in half
    • 1 cup rice
    • salt and pepper, to taste
    • pinch allspice
    • 2 cloves garlic, crushed
    • 1 tablespoon mustard
    • 2 tablespoons lemon juice
    • 2 cups chicken stock

    1. Place the chicken in the slow cooker and lay a bacon strip over each breast. Sprinkle over the rice, salt and pepper to taste and the allspice.
    2. Mix together the garlic, mustard, lemon juice and stock. Pour over the rice.
    3. Cook on low for 8 hours.
