Thai Chicken Stuffed Capsicums

    You don't see it at restaurants but capsicums stuffed with chicken mince and spices are a common Thai home dish. Easy to make and delicious too.

    Serves: 4 

    • 4 red capsicums
    • 2 tablespoons soy sauce
    • 1 tablespoon chilli flakes
    • 2 teaspoons ground black pepper
    • 4 cloves garlic, finely diced
    • 2 spring onions, finely diced
    • 2cm fresh ginger, finely diced
    • 500g chicken mince
    • 2 tablespoons toasted sesame seeds
    • 1 egg
    • 2 tablespoons sesame oil

    1. Leaving the stems on, cut the capsicums in half lengthwise and remove the seeds.
    2. Combine all the other ingredients except sesame oil. Fill the capsicum halves with the mince and smooth down.
    3. Heat the sesame oil in a frypan and fry the capsicums, stuffing side down, for 30 minutes or until cooked through.
