Satay Chicken

    This is my attempt to recreate the wonderful satay chicken skewers I bought in Thailand. These are also good with peanut sauce.

    Serves: 4 

    • 600g chicken breasts, sliced into strips
    • 2 cloves garlic, finely diced
    • 2 teaspoons turmeric
    • 1 teaspoon coriander
    • 1/2 teaspoon cumin
    • 1 tablespoon sugar
    • 1 tablespoon fish sauce
    • pinch salt
    • 1/4 cup vegetable oil

    1. In a glass bowl, combine the garlic, turmeric, coriander, cumin, sugar, fish sauce, salt and oil. Mix in the chicken and let marinate at least 1 hour, or refrigerate overnight. Soak about 12 wooden skewers to prevent burning.
    2. Preheat the barbecue. Thread the meat onto skewers. Cook about five minutes a side, or until done. Don't let them burn!
