Greek chicken tends to be fairly simple as this lovely basting sauce shows. The quantities given will make about 1 1/2 cups of sauce - it will keep up to a week in the fridge.

Serves: 4 

  • 8 chicken thighs
  • 2 cups mixed fresh herbs (parsley, sage, rosemary, thyme, basil etc)
  • 10 cloves garlic
  • 1 tablespoon chilli flakes
  • 1/2 cup olive oil
  • 2 tablespoons salt
  • 1/4 cup cracked black pepper

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. In a food processor, combine all ingredients except the chicken. Puree but leave the mixture a little chunky.
  2. Preheat the grill and place the thighs on a rack on a roasting tin. Baste well with the paste. Grill until the thighs are done, turning and basting as needed, about 20 minutes.
