    Jamaican jerk chicken is a chicken marinated in a fiery mix of spices and cooked on the barbecue. It's a must for lovers of spicy food.

    • Marinade
    • 1/3 cup lime juice
    • 10 hot chilli peppers
    • 2 tablespoons white vinegar
    • 2 tablespoons orange juice
    • 3 spring onions, finely diced
    • 2 tablespoons basil
    • 2 tablespoons thyme
    • 2 tablespoons mustard seeds
    • 2 teaspoons allspice
    • 1 teaspoon ground cloves
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • Chicken
    • 16 chicken drumsticks

    1. Place all the marinade ingredients in a food processor and pulse to combine. If it is too thick, add a little more orange juice.
    2. Place the drumsticks in the marinade, cover and refrigerate overnight.
    3. Preheat the barbecue and oil the grate. Cook the chicken, turning occasionally, until the meat pulls away from the bone, 30-40 minutes.
