Chicken breast halves or fillets are fried and served with a simple sauce of shallots, lemon, capers and butter. So easy and so good!

Serves: 4 

  • 4 boneless, skinless chicken breast halves
  • salt and pepper, to taste
  • 1/4 cup flour
  • 3 tablespoons olive oil
  • 4 tablespoons onion shallots, finely diced
  • 1 cup chicken stock
  • 4 tablespoons lemon juice
  • 2 tablespoons capers
  • 3 tablespoons unsalted butter

  1. Sprinkle the chicken breasts with salt and pepper and coat with flour. Heat the olive oil in a heavy frypan and cook the chicken 4 minutes on each side. Set aside.
  2. To the frypan add the shallots and fry 1 minute. Add the chicken stock and bring to the boil. Add the lemon juice and capers. Boil until reduced to 1/2 cup, about 5 minutes. Swirl in the butter and serve over the chicken.
