Thai Lemon Chicken Soup

    Thai chicken soups tend to be very fast to make and bursting with flavour. This is similar to the classic tom yum soup as it is quite sour.

    Serves: 4 

    • 3 cups chicken stock
    • 1 stalk lemongrass, cut into 3cm pieces
    • 1 boneless skinless chicken breast, cut into bite size pieces
    • 1 cup cauliflower, cut into bite size pieces
    • 1 tomato, cut into 8 wedges
    • 1/2 cup fresh mushrooms, sliced
    • 1 teaspoon sugar
    • 2 tablespoons fish sauce
    • 1 1/2 tablespoons lemon juice

    1. In a saucepan, bring the stock to a boil. Add lemongrass and reduce heat. Simmer five minutes until you can taste the lemongrass in the stock.
    2. Add chicken, cauliflower, tomato and mushrooms and cook, uncovered, 5 minutes or until chicken is tender.
    3. Add sugar, fish sauce and lemon juice. Stir well and serve.
