Yakitori Chicken Skewers

    I don't have a barbecue so I cook these Japanese chicken skewers under the grill and they are great. Serve with white rice and stir fried bok choy.

    Serves: 2 

    • 2 chicken breasts, boneless and skinless
    • 4 thick spring onions, cut into 3cm lengths (optional)
    • 1/2 cup sake
    • 1/2 cup mirin
    • 1/3 cup brown sugar
    • 1 cup soy sauce
    • 2 tablespoons honey

    1. Cut the chicken breasts into bite sized cubes and thread on soaked wooden skewers alternately with spring onions. You can also use baby leeks.
    2. In a saucepan, combine sake, mirin, sugar and soy sauce. Bring to the boil and simmer 3 minutes. Add the honey and simmer 2 more minutes.
    3. Heat the grill and cook the skewers, brushing frequently with the soy sauce mixture. Turn often until the chicken is done. Serve hot.
