Sesame Chicken Thighs with Garlic Sauce

    It seems like a lot of ingredients but this Chinese chicken thigh recipe is pretty easy to make and so delicious! Serve with white rice.

    Serves: 4 

    • 6 boneless, skinless chicken thighs
    • 1 egg yolk
    • 1 tablespoon soy sauce
    • 1 clove garlic, finely diced
    • 4 cups vegetable oil, for frying
    • spring onions, sliced, to garnish
    • Batter
    • 1 cup plus 2 tablespoons flour
    • 3 tablespoons cornflour
    • 1 teaspoon baking powder
    • 3/4 cup cold water
    • 2 eggs, beaten
    • 2 teaspoons vegetable oil
    • 1 tablespoons sesame seeds
    • Garlic sauce
    • 1 tablespoon vegetable oil
    • 4 cloves garlic, finely diced
    • 1 teaspoon fresh ginger, finely diced
    • 1/2 cup chicken stock
    • 1 1/2 teaspoons sugar
    • 2 tablespoons soy sauce
    • pinch pepper

    1. Cut the thighs into bite sized pieces, not too small. In a bowl combine them with the egg yolk, 1 tablespoon soy and 1 clove garlic. Set aside.
    2. Sift the flour, cornflour and baking powder into a bowl. Add the water, eggs, 2 teaspoons oil and sesame seeds and mix well.
    3. Make the sauce: heat the 1 tablespoon oil and add garlic and ginger. Cook briefly then add stock, sugar, soy and pepper. Simmer 5 minutes.
    4. Heat up 4 cups of vegetable oil in a saucepan. Coat the chicken pieces with the batter then deep fry in batches until golden brown.
    5. In a frypan, combine the chicken and garlic sauce and heat through. Serve garnished with spring onions.
