Spicy Thai Chicken Mince

    This is a Northern Thai chicken mince recipe with Chinese influences. It is simplicity itself to make as a side dish for a larger Thai feast.

    Serves: 4 

    • 500g chicken mince
    • 1 large lettuce leaf
    • 1 tablespoon spring onion, thinly sliced
    • 1 teaspoon garlic, finely diced
    • 1 1/2 teaspoons fresh ginger, finely diced
    • 3 tablespoons tahini
    • 1 1/2 tablespoons soy sauce
    • 1 tablespoon white vinegar
    • 1 teaspoon sugar
    • salt, to taste
    • 1 teaspoon garlic chilli paste
    • 1 tablespoon sesame oil

    1. Boil the chicken mince until cooked through, about five minutes. Drain, let cool and break up any lumps. Place the mince on the lettuce leaf as a serving dish.
    2. Mix all the remaining ingredients together well. Pour the sauce over the chicken and serve.
