Caesar Salad with Blue Cheese Dressing

    The great thing about Caesar salad is you can customise it any way you like - add chicken, shrimp or beef for a filling meal.

    Serves: 4 

    • 2 tablespoons butter
    • 2 tablespoons olive oil
    • 2 cloves garlic, whole
    • salt and pepper to taste
    • 1/2 baguette, cut into cubes
    • 1 head cos lettuce, torn up
    • 2 soft boiled eggs
    • 1/2 cup Parmesan cheese, shaved
    • Dressing
    • 2 cloves garlic, crushed
    • 1/2 teaspoon salt
    • 2 teaspoons lemon juice
    • 1 teaspoon Worcestershire sauce
    • salt and pepper, to taste
    • 1/2 cup blue cheese, crumbled
    • 1/2 cup olive oil

    1. In a frypan heat up the butter, 2 tablespoons olive oil, whole peeled garlic cloves and salt and pepper to taste. Remove from the heat, let sit 10 minutes and discard the garlic. Toss with the bread cubes in a bowl. Toast the bread cubes in a hot oven until golden, about 10 minutes.
    2. Make the dressing by combining all the ingredients and whisking until thickened.
    3. In a bowl, combine the lettuce, bread cubes, soft boiled eggs and Parmesan. Drizzle with the blue cheese dressing and serve.
