In a frypan heat up the butter, 2 tablespoons olive oil, whole peeled garlic cloves and salt and pepper to taste. Remove from the heat, let sit 10 minutes and discard the garlic. Toss with the bread cubes in a bowl. Toast the bread cubes in a hot oven until golden, about 10 minutes.
Make the dressing by combining all the ingredients and whisking until thickened.
In a bowl, combine the lettuce, bread cubes, soft boiled eggs and Parmesan. Drizzle with the blue cheese dressing and serve.
