Egg Free Caesar Salad

    A lower fat version of Caesar salad for those who are watching their weight or just have to avoid eggs. The taste is very similar.

    Serves: 4 

    • 3 cups bread cubes (sourdough or ciabatta)
    • 2 cloves garlic, finely diced
    • salt and pepper, to taste
    • olive oil cooking spray
    • 1 head cos lettuce, torn up
    • 3 tablespoons grated Parmesan cheese
    • Dressing
    • 2 tablespoons water
    • 1 tablespoon grated Parmesan cheese
    • 1 tablespoon parsley, chopped
    • 2 teaspoons red wine vinegar
    • 1 teaspoon Dijon mustard
    • 1 teaspoon fresh thyme leaves
    • 2 anchovies
    • 1 clove garlic, crushed
    • 2 tablespoons olive oil

    1. Make the dressing by combining all the ingredients in a bowl except the olive oil and whisking with a fork. While whisking, slowly drizzle in the olive oil.
    2. In a bowl, combine the bread cubes, diced garlic and salt and pepper to taste. Spritz with cooking spray while tossing. Spread on a baking tray and bake at 160 degrees C until golden, about 10 minutes.
    3. In a salad bowl, place the lettuce, bread cubes and 3 tablespoons Parmesan cheese and toss. Drizzle over the dressing, toss and serve.
