Rice salads are common in Spain and France, though in Spain they use mayonnaise and in France they use vinaigrette. You can use other seafood like tuna but I like a crab salad.
Cook the rice in boiling salted water until done, about 12 minutes. Drain, rinse with cold water, drain again and put in a bowl. Toss with the olive oil.
When the rice is cool, stir in the mayonnaise. Add onion, capsicum, parsley and salt and pepper to taste; mix well.
