Rice and Crab Salad

Rice salads are common in Spain and France, though in Spain they use mayonnaise and in France they use vinaigrette. You can use other seafood like tuna but I like a crab salad.

Serves: 6 

  • 1 cup white rice
  • 2 tablespoons olive oil
  • 1 cup mayonnaise
  • 1/2 cup red onion, finely diced
  • 1/2 cup red capsicum, diced
  • 1/4 cup Continental parsley, chopped
  • salt and pepper, to taste
  • 200g crab meat

Preparation:10min  ›  Cook:12min  ›  Extra time:20min cooling  ›  Ready in:42min 

  1. Cook the rice in boiling salted water until done, about 12 minutes. Drain, rinse with cold water, drain again and put in a bowl. Toss with the olive oil.
  2. When the rice is cool, stir in the mayonnaise. Add onion, capsicum, parsley and salt and pepper to taste; mix well.
  3. Top with the crab meat and serve.
