Fresh Mozzarella Caprese Salad

The simplest and best of all salads is the caprese salad or insalata caprese. Try and make sure you get a tomato slice, a cheese slice and a basil leaf with each bite.

Serves: 4 

  • 8 ripe vine tomatoes
  • 500g fresh mozzarella
  • 1/2 cup basil leaves
  • 60ml extra virgin olive oil
  • sea salt and freshly ground black pepper, to taste

  1. Slice the tomatoes fairly thinly and the mozzarella a bit more thinly. Arrange the slices in an alternating pattern on a plate with basil leaves tucked between them.
  2. Drizzle with olive oil and sprinkle with salt and pepper. Serve immediately.
