Gingery Thai Fruit Salad Dressing

    Ginger and lime add a Thai note to this lovely syrupy fruit salad dressing. Serve over your choice of tropical fruits with ice cream.

    Serves: 4 

    • 1 1/4 cups brown sugar
    • zest and juice of 3 limes
    • 4cm ginger, grated
    • 1 cup water

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Put all the ingredients in a small saucepan, bring to the boil, reduce heat and simmer until the sugar has dissolved and the dressing is syrupy. Let cool.
