Moroccan Artichoke and Couscous Salad

Couscous is very easy to cook and jarred artichoke hearts make this delicious Moroccan salad a snap to prepare. Serve as a side dish.

Serves: 4 

  • 1/2 cup couscous
  • 1 1/2 cups chicken stock
  • 1 tablespoon butter
  • 1 small jar brined artichoke hearts, drained
  • 2 cloves garlic, finely diced
  • 12 kalamata olives, pitted
  • 1 tomato, finely chopped
  • squeeze lemon juice
  • salt and pepper, to taste
  • mint, to garnish

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. In a saucepan combine the couscous, chicken stock and butter. Bring to a boil, reduce heat to a simmer and simmer until the couscous is done and liquid absorbed, about 20 minutes.
  2. In a salad bowl combine the couscous with the artichoke hearts, garlic, olives and tomato. Squeeze lemon over and add salt and pepper to taste. Garnish with chopped mint.
