Thai Beef Salad with Rice Noodles

    The addition of rice noodles makes this Thai beef salad into a filling meal. You can add more Thai chillies if you like, or omit them.

    • 60g rice noodles
    • 300g steak, thinly sliced
    • salt and pepper, to taste
    • 1 tablespoon oil
    • 2 cups lettuce, torn
    • 1/2 red onion, thinly sliced
    • 1 cucumber, peeled and sliced
    • 1 Thai chilli, finely diced
    • 1/4 cup lime juice
    • 1 teaspoon sugar
    • 1 tablespoon fish sauce
    • Thai basil, to garnish

    1. Cook the rice noodles according to package directions, drain and rinse with cold water.
    2. Sprinkle the steak slices with salt and pepper and heat 1 tablespoon oil in a heavy frypan. Fry the steak about 4 minutes, until just browned.
    3. In a salad bowl, combine steak, noodles, lettuce, red onion, cucumber and Thai chilli. Mix together the lime juice, sugar and fish sauce until the sugar has dissolved and pour over the salad. Toss and garnish with torn Thai basil leaves.
