Thai Beef Salad with Tofu

    Little crispy bites of tofu are the perfect balance to the salty flavours in this Thai beef salad. Simple to make and very flavourful.

    Serves: 4 

    • 200g firm tofu, cut into cubes
    • 4 cos lettuce leaves, torn
    • 1/2 cup fresh mint, torn
    • 1/2 cup Thai basil, torn
    • 1 cucumber, peeled and sliced
    • 1 red onion, sliced
    • 1 teaspoon oil
    • 100g steak, cut in thin strips
    • salt and pepper, to taste
    • Dressing
    • 1/4 cup lime juice
    • 1 tablespoon fish sauce
    • 2 teaspoons sesame oil
    • 1/2 teaspoon sugar
    • 1 Thai chilli, finely diced

    1. Put the tofu cubes on paper towels and let sit 30 minutes so they give up some of their moisture.
    2. In a salad bowl, combine lettuce, mint, basil, cucumber and onion.
    3. Make the dressing: combine the lime juice, fish sauce, sesame oil, sugar and Thai chilli and whisk until the sugar has dissolved. Drizzle half the dressing over the lettuce and toss.
    4. Heat a heavy frypan with 1 teaspoon oil and add the tofu and beef. Sprinkle with salt and pepper and cook until everything is seared, about 5 minutes. Add the remaining dressing to deglaze and stir around. Add the tofu and beef to the salad and serve.
