Bacon, Lettuce and Tomato Bread Salad

    This bread salad is based on the classic bacon, lettuce and tomato sandwich. It's a winning combination of flavours and a great lunch.

    Serves: 4 

    • 1/2 baguette, cut into cubes
    • cooking spray
    • 4 rashers bacon
    • 1 tablespoon oil
    • 1/4 cup balsamic vinegar
    • salt and pepper, to taste
    • 1 cos lettuce, torn
    • 4 roma tomatoes, cut into wedges
    • 1/2 cup feta cheese, crumbled

    1. Preheat the oven to 200 degrees C. Place the bread cubes on a baking tray and lightly mist with cooking spray. Toast in the oven until golden, about 10 minutes.
    2. Fry the bacon in a frypan until crisp, then remove from the heat and cut into small pieces. To the drippings in the frypan add the oil, vinegar, salt and pepper.
    3. In large salad bowl combine the torn lettuce, tomatoes, bread and bacon. Drizzle the vinaigrette over the top and toss. Sprinkle with feta and serve!
