Warm Chicken Caesar Salad

    This is not, strictly speaking, a classic Caesar salad as it has a balsamic vinaigrette. It's a warm chicken salad which is a bit lighter.

    Serves: 4 

    • 2 cups French bread, cut into 1cm cubes
    • 1 tablespoon olive oil
    • 2 skinless, boneless chicken breast halves
    • black pepper, as needed
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons olive oil
    • 1 teaspoon garlic, finely diced
    • 1 teaspoon Dijon mustard
    • 1 anchovy fillet, finely diced
    • 1 cos lettuce, chopped
    • 1/4 cup grated Parmesan

    1. Preheat the oven to 200 degrees C. Place the bread cubes in a single layer on a baking tray and bake until lightly toasted, about 8 minutes.
    2. Heat a heavy frypan with 1 tablespoon olive oil. Sprinkle both sides of the chicken breasts with pepper then fry about 4 minutes per side or until done. Slice the chicken.
    3. In a bowl whisk up the balsamic, 2 tablespoons olive oil, garlic, mustard and anchovy with a sprinkle of pepper.
    4. Put the chopped lettuce in a salad bowl and toss with the dressing. Arrange the chicken on top, sprinkle over the toasted bread and Parmesan cheese. Enjoy!
