Preheat the oven to 200 degrees C. Place the bread cubes in a single layer on a baking tray and bake until lightly toasted, about 8 minutes.
Heat a heavy frypan with 1 tablespoon olive oil. Sprinkle both sides of the chicken breasts with pepper then fry about 4 minutes per side or until done. Slice the chicken.
In a bowl whisk up the balsamic, 2 tablespoons olive oil, garlic, mustard and anchovy with a sprinkle of pepper.
Put the chopped lettuce in a salad bowl and toss with the dressing. Arrange the chicken on top, sprinkle over the toasted bread and Parmesan cheese. Enjoy!
