Creamy Warm Chicken Salad

    With this warm chicken salad recipe the chicken is wrapped in plastic wrap before poaching which keeps it especially moist and succulent.

    Serves: 4 

    • 400g boneless, skinless chicken breast halves
    • 1/2 cup mayonnaise
    • 1/2 cup Greek yoghurt
    • 1 tablespoon lemon juice
    • 1 tablespoon white wine vinegar
    • 1 tablespoon Dijon mustard
    • 1 teaspoon honey
    • salt and pepper, to taste
    • 1/3 cup celery, sliced
    • 60g toasted almonds
    • 6 cups mixed lettuce leaves

    1. Heat a saucepan of water to a boil. Wrap the chicken breasts tightly in plastic wrap, add to the boiling water and simmer 20 minutes. Remove and let cool slightly before shredding.
    2. Combine the mayonnaise, yoghurt, lemon juice, vinegar, mustard, honey, salt and pepper. Place in a bowl and add the chicken, celery and almonds; toss well. Serve over lettuce leaves.
