Pawpaw and Crab Salad

    A sweet and spicy crab salad with a little pawpaw for a tropical feel. Make sure to pick any bits of shell out of the crab meat.

    Serves: 4 

    • 1 1/2 cups pawpaw, diced
    • 4 spring onions, sliced
    • 1 stalk celery, thinly sliced
    • 1 green chilli, seeded and thinly sliced
    • 400g crab meat
    • 3 tablespoons canola oil
    • 2 tablespoons cider vinegar
    • 2 teaspoons sugar
    • 1 teaspoon Dijon mustard
    • 1/4 teaspoon black pepper
    • pinch salt

    1. In a salad bowl, combine pawpaw, spring onions, celery, chilli and crab.
    2. In a small bowl, combine oil, vinegar, sugar, Dijon, pepper and salt. Whisk well with a fork then pour over the crab mixture. Chill.
