Berry Pancakes

    This is a basic pancake mixture that I add berries to whether fresh or frozen, mixed or plain. There is nothing like some extra fruit to start the day.

    Serves: 4 

    • 1 cup self raising flour
    • pinch salt
    • 1/4 teaspoon bicarb soda
    • 2 tablespoons sugar
    • 1 egg
    • 1/2 cup milk
    • 1/4 cup berries of your choice

    1. Sift the flour, salt and bicarb into a bowl then make a well in the centre and add the sugar, egg and milk.
    2. Beat the mixture until it becomes a smooth batter, adding more milk if too thick. Stir in the berries.
    3. Heat a frypan to medium, then grease with butter if not non-stick.
    4. Spoon the batter into the frypan to make the pancakes, cook until bubbles have formed then flip. Repeat until all the mixture is gone.
