Warm Chicken and Quinoa Salad

    A lovely warm chicken salad made with quinoa and a few surprising ingredients such as pistachios and dried pineapple for some real flavour.

    Serves: 4 

    • 1 1/2 cups water
    • 3/4 cup quinoa
    • 1/4 cup pistachios
    • 1 boneless, skinless chicken breast
    • 1/3 cup spring onions, sliced
    • 1/3 cup dried pineapple
    • 1 tablespoon sesame oil
    • 1 1/2 teaspoons fresh ginger, finely diced
    • 1/2 teaspoon cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon cayenne pepper

    1. Preheat the grill.
    2. In a saucepan boil the 1 1/2 cups water. Add the quinoa, reduce heat to a simmer, cover and cook 12 minutes. Meanwhile, grill the chicken until done to your liking. Chop the chicken.
    3. Heat a small saucepan over high heat and add the pistachios. Cook them until lightly toasted.
    4. In a salad bowl combine the quinoa, chicken and pistachios and toss. Add all the remaining ingredients and toss again.
