Greek Lentil Soup (Fake)

    This is a very simple dish I learnt from my yia yia, it is an old Greek peasant style dish and is extremely tasty.

    Serves: 4 

    • 2 cups brown or green lentils
    • 2 bay leaves
    • 1 medium sized onion, diced
    • 2 cloves garlic, minced
    • 1/2 cup olive oil
    • 2 medium sized carrots, diced
    • salt and pepper, to taste
    • 6 cups water
    • 1/4 cup white wine vinegar

    1. Wash lentils and drain.
    2. Put lentils, bay leaves, onion, garlic, oil, carrots, salt and pepper in a large pot with the water and turn on medium high until starts to simmer.
    3. Once it starts to simmer turn down to low medium for 40 minutes, stirring occasionally.
    4. Once you have waited the 40 minutes test lentils to see if cooked, if cooked take off heat, if not cooked leave on for a further 10 minutes.
    5. Once cooked take off heat and add vinegar.


    Serve with crusty bread and Greek salad.
