Hot Butterscotch Banana Split

    This is a sweet dessert of bananas with a hot peach butterscotch sauce over the top. It is surprisingly easy to make for such a complex set of flavours.

    Serves: 4 

    • 1/4 cup shredded coconut
    • 60g unsalted butter
    • 1/4 cup brown sugar
    • 1/2 teaspoon ground cinnamon
    • 1/4 cup cream
    • 1 tin (400ml) peaches, drained
    • 4 small bananas
    • vanilla ice cream

    1. Toast the coconut in a frying pan, stirring constantly over a low heat until it is light brown then remove and cool.
    2. Melt butter in a frying pan then add the brown sugar, cinnamon and cream. Stir until the sugar is dissolved.
    3. Add peaches then reduce the heat and simmer until thickened slightly.
    4. Cut the bananas in half lengthwise, place into four individual serving bowls then add a serve of ice cream. Top with the hot peach sauce and coconut.
