    This is a tasty custard slice that features apple and current jam also. It is a bit tricky to put together but is worth it, especially for a dinner party dessert.

    Ingredients
    Serves: 4 

    • 1 1/2 sheets puff pastry, thawed
    • 1/2 cup custard powder
    • 2 1/2 cups milk
    • 1/4 cup sugar
    • 1 teaspoon vanilla essence
    • 1 cup sweetened apple puree
    • 2 tablespoons current jam, or similar
    • 1/2 cup icing sugar, sifted
    • 2-3 teaspoons water

    1. Place three sheets of puff pastry on a baking tray and prick all over with a fork. Bake in a 200 degree C oven for 10 minutes or until puffed and brown. Cool then split in half horizontally.
    2. Make the custard as per the packet instructions using the custard powder, milk, sugar and vanilla.
    3. Bottom layer - Take two slices of pastry and put one on top of the other then spread with the apple puree.
    4. Middle layer - Take two slices of pastry and put one on top of the other then spread with the custard.
    5. Top layer - Melt the jam gently in a saucepan then spread on the base of one of the pastry sheets. Make the icing then spread gently over the top over the jam.
    6. Once the three layers are stacked together place in the fridge to chill thoroughly before serving.
