Red Curry Thai Salad Dressing

    The advantage of putting curry in a Thai salad dressing is you can then make a very simple curried shrimp or chicken salad - just cook the meat and toss with dressing and greens.

    • 4 tablespoons fish sauce
    • juice of 2 limes
    • 2 teaspoons brown sugar
    • 2 tablespoons red Thai curry paste

    1. Combine the fish sauce, lime juice, sugar and curry paste in a bowl and beat well with a fork until smooth and the sugar has dissolved.
