Sesame Oil Thai Salad Dressing

This may be a little more work than a quick Thai salad dressing but it produces a wonderfully fragrant oil that is perfect on chicken or noodle salads.

Makes: 1 cup dressing

  • 2cm fresh ginger, peeled and sliced
  • 3 spring onions, sliced
  • 1 Thai chilli, seeded and chopped
  • 1 tablespoon Szechuan peppercorns
  • 3/4 cup peanut oil
  • 1/4 cup sesame oil

Preparation:10min  ›  Extra time:2hours marinating  ›  Ready in:2hours10min 

  1. Put the ginger, spring onions, chilli and peppercorns in a spice grinder or mortar and pestle and pulverise.
  2. Heat the peanut and sesame oils in a small saucepan until hot but not smoking. Remove from the heat, add the flavourings, stir and cover. Let cool completely then strain.
