Thai Beef Salad with Cos Lettuce

    A great Thai beef salad for a barbecue because it can all be made ahead. When ready, quickly sear the meat and add it to the salad.

    Serves: 8 

    • Salad
    • 1 head cos lettuce, torn up
    • 1 large cucumber, peeled and sliced
    • 1 red onion, peeled and sliced
    • 10 radishes, thinly sliced
    • 2 tomatoes, cut into eighths
    • 1 bunch spring onions, cut into 3cm lengths
    • 16 mint leaves
    • 16 Thai basil leaves
    • 1/2 cup coriander leaves
    • Sauce
    • 1/2 cup fish sauce
    • 1/3 cup lime juice
    • 1 tablespoon garlic, finely diced
    • 2 teaspoons ginger, grated
    • 1/2 teaspoon chilli flakes
    • Meat
    • 8 thin slices eye fillet, about 600g
    • 1/4 cup vegetable oil
    • salt and pepper, to taste

    1. Heat the barbecue.
    2. Combine all the salad ingredients.
    3. Combine all the sauce ingredients and mix well. Set aside.
    4. Sprinkle the meat with salt and pepper. Barbecue on both sides to desire degree of doneness, no more than a few minutes.
    5. While the meat is still hot cut the slices into 1cm strips and add to the salad. If there are any meat juices add them as well. Pour the sauce over all and toss. Serve immediately.
