Spicy Tomato Moroccan Salad

    For those who enjoy spicy food, try this Moroccan salad at your next Middle Eastern feast. You can definitely add more chillies if you like, the tomatoes absorb a lot of heat.

    Serves: 6 

    • 4 large ripe tomatoes
    • 4 stalks celery, with leaves
    • 1/2 cup parsley, chopped
    • 1/3 cup capers
    • 3 hot green chillies
    • 1/2 preserved lemon
    • salt, to taste
    • 1/4 teaspoon cayenne pepper
    • 1 teaspoon paprika
    • 1/4 cup olive oil

    1. Core the tomatoes and cut into large cubes. Put them in a salad bowl.
    2. Trim the parsley and roughly dice it. Add to the tomatoes along with the parsley and capers.
    3. Chop the chillies and dice the preserved lemon. Add to the salad bowl.
    4. Blend the salt to taste, cayenne, paprika and olive oil then pour over the salad. Toss and serve.

    Preserved Lemons

    You can buy preserved lemons at gourmet groceries and Middle Eastern markets, or easily make your own.
