Moroccan Carrot Salad

    This traditional moroccan salad is served as a small dish in a bigger feast. It features traditional flavours like mint, lemon and garlic.

    Serves: 10 

    • 450g carrots, peeled
    • 1/4 cup olive oil
    • 3 tablespoons lemon juice
    • 1 clove garlic, finely diced
    • 1/2 teaspoon cumin
    • 1/4 teaspoon dried mint
    • salt and freshly ground pepper to taste
    • 1/2 teaspoon icing sugar
    • 1/4 teaspoon cayenne pepper

    1. Cut the carrots into matchsticks with a sharp knife or the julienne cutter in a food processor.
    2. Combine the olive oil, lemon juice, garlic, cumin, mint, salt and pepper, icing sugar and cayenne and pour over the carrots. Toss to blend.
