Balsamic Dressing with Capers and Cornichons

    Cornichons, tiny French sour pickles, add a delightful touch to this piquant balsamic vinaigrette. You can substitute gherkins instead if you can't find them.

    • 2 tablespoons balsamic vinegar
    • 8 tablespoons olive oil
    • 1 teaspoon capers
    • 1 teaspoon cornichons, finely diced
    • 1 teaspoon onion, finely diced
    • 1 tablespoon parsley, chopped
