Piquant Warm Chicken Salad

    In this warm chicken salad chicken is cooked and shredded and served with hot potatoes and peas in a mayonnaise dressing.

    Serves: 6 

    • 1 large chicken breast
    • 2 tablespoons green olives, diced
    • 1 tablespoon capers
    • 2 tablespoons gherkins, diced
    • 1 tablespoon grated onion, or more to taste
    • 1/4 cup celery, finely diced
    • 1/2 cup green peas
    • 2 eggs, hard boiled and chopped
    • 1/2 teaspoon white sugar
    • 1 1/2 cups mayonnaise
    • lemon juice, to taste
    • salt and pepper, to taste
    • 1 large potato, peeled and cubed

    1. In a serving bowl, combine the olives, capers, gherkins, onion, celery, eggs, sugar, mayonnaise and lemon juice. Stir to blend well.
    2. Boil the chicken until well cooked, about 20 minutes. In a separate saucepan, boil the potatoes for 10 minutes, then add the peas to the potatoes and boil another 5 minutes. Drain the peas and potatoes.
    3. Shred or cube the chicken and add it and the peas and potatoes to the mayonnaise mixture. Toss, taste and add salt and pepper as needed. Serve warm.
