This is a great fennel salad to serve at a dinner party. Make sure you use good quality kalamata olives, tinned ones have no flavour.

Serves: 6 

  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 1/2 teaspoon salt
  • 1 clove garlic, smashed
  • zest of 2 oranges
  • 3/4 cup kalamata olives, pitted
  • 1 fennel bulb, thinly sliced
  • 1/2 cup parsley, chopped
  • 1 bunch watercress
  • pepper, to taste

  1. Combine the oil, lemon juice and 1/2 teaspoon salt. Add the crush garlic and let it sit for an hour.
  2. In a serving bowl, add the zest, olives, fennel and parsley. Put the watercress on top and chill until ready to serve.
  3. When serving, remove the garlic from the dressing. Drizzle the dressing over the salad and toss. Add pepper to taste, and more salt if needed.
