    This is my cross between classic Green Goddess dressing and a balsamic vinaigrette which I think has a very interesting blend of flavours.

    Serves: 4 

    • 4 anchovy fillets
    • 2 tablespoons milk
    • 2 tablespoons balsamic vinegar
    • 4 tablespoons mayonnaise
    • 8 tablespoons extra virgin olive oil
    • 1 spring onion, finely sliced
    • 3 tablespoons fresh tarragon, chopped
    • 2 tablespoon parsley, chopped
    • salt and pepper to taste

    1. In a bowl, thoroughly mash the anchovies with a fork. Add the milk, vinegar and mayonnaise then whisk until smooth.
    2. Slowly add the olive oil, still whisking. Stir in the spring onion, tarragon and parsley. Taste and add salt and pepper if needed. The dressing should be quite thick.
