Spelt Cheese Biscuits

    These savoury cheese biscuits are like oaten biscuits but with the addition of a little Parmesan cheese. Spelt flour is available in health food shops.

    Makes: 25 biscuits

    • 1/2 cup rolled oats
    • 1 1/2 cups spelt flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking powder
    • 2 tablespoons brown sugar
    • 1/2 cup Parmesan cheese, grated
    • 1/4 cup lard, cubed
    • 2 tablespoons unsalted butter, cubed
    • 1/3 cup milk

    1. Preheat the oven to 200 degrees C. Grease a baking tray.
    2. Break up the oats in a food processor but don't pulverise them. Put in a bowl with the flour, salt, baking powder, sugar and cheese and mix well.
    3. Add the lard and butter and rub in to make crumbs. Slowly add in the milk, kneading until you have a firm dough.
    4. Roll out the dough to 5mm thick and cut out with 5cm round cutters. Place on baking tray and bake 10-15 minutes until golden. Don't let them overcook. Cool on wire racks.
