Stilton Cheese Biscuits

You can use any firm blue cheese you prefer but I think these biscuits are best with stilton, though it can be a little pricy.

Serves: 6 

  • 80g butter
  • 250g stilton cheese
  • 125g almonds, diced
  • 130g plain flour
  • 1 egg yolks

  1. Mix together the butter and stilton. Add the almonds, flour and egg yolks and mix well.
  2. Roll the dough into a log, wrap well in plastic wrap and freeze at least an hour (can be longer).
  3. Preheat the oven to 180 degrees C. Let the dough thaw a little if necessary. Line a baking tray with baking paper.
  4. Cut the dough into slices about 3-5mm thick. Place on trays and bake 12 minutes. Let cool on wire racks.
