Chocolate Cheesecake Biscuits

I call these cheesecake biscuits because they are lighter and crumblier than regular hard cheese biscuits. You can ice them if desired.

Makes: 60 biscuits

  • 250g butter, softened
  • 2 cups (440g) white sugar
  • 4 eggs
  • 1 teaspoon vanilla essence
  • 500g ricotta cheese
  • 4 cups (500g) plain flour
  • 1 teaspoon bicarb soda
  • 1/4 teaspoon salt
  • 60g cocoa powder

Preparation:30min  ›  Cook:10min  ›  Ready in:40min 

  1. Preheat oven to 180 degrees C. Grease baking trays.
  2. In a medium bowl cream together butter and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and ricotta cheese. Combine the flour, bicarb soda, salt and cocoa; gradually stir into the cheese mixture. Drop by rounded teaspoonfuls 5cm apart onto the prepared baking trays.
  3. Bake for 8 to 10 minutes in the preheated oven or until firm. Cool on wire racks.
